Ingredients

  • 1 pkt Yeast
  • 1/4 c. Water
  • 2 1/4 c. Water, lukewarm
  • 6 Tbsp. Extra virgin olive oil
  • 6 c. Flour, all-purpose
  • 1 tsp Salt Sea salt Pepper Rosemary, fresh Thyme, fresh

Directions

  1. Dissolve yeast in hot water. Let it sit for two min. Add in the rest of the ingredients and mix well. Turn out onto board and knead for 10 min. Place back in bowl covered with a damp towl and let rise 30 to 40 min.
  2. Divide dough into 3 parts and place in 3 olive-oiled pie pans.
  3. Dimple dough with fingers. Place on top the following mix: Course sea salt, fresh grnd pepper, minced rosemary and thyme. If herbs are dry, soak them in water for 10 min and then pat dry on paper towels.
  4. Let rise 50 to 60 min.
  5. Bake at 350 for 25 min.
