Ingredients
- 1 1/2 tsp Grnd cumin
- 1 c. Fresh lime juice
- 1/2 c. Fresh orange juice
- 2 lb Bay scallops
- 1 x Warm red chili pepper *
- 1/4 c. Red onion, finely minced
- 3 x Ripe plum tomatoes **
- 1 x Red pepper, seeded & minced
- 3 x Scallions, minced
- 1 c. Cilantro, minced
- 1 x Lime, sliced, for garnish
Directions
- *Note: Warm red chili pepper should be finely minced.** Plum tomatoes should be seeded and minced.
- Stir the cumin into the lime and orange juices and pour over the scallops.
- Stir in the minced chili pepper and red onion. Cover and chill for at least 2 hrs.
- Just before serving, drain the scallops and mix with the minced tomatoes, sweet pepper, scallions and cilantro. Garnish with the slices of lime.
