Directions

  1. Directions: Parboil duck 5 min with 1 piece celery and small onion.
  2. Remove and drain. Rub cavity and outside with salt & pepper. Place inside duck 1 small onion, apple studded with cloves, and a small white potato.
  3. Bake 20 min at 450-F uncovered. Reduce heat to 350-F and bake covered 15-20 min. Baste with equal parts melted butter, warm water, and wine and/or possibly orange juice mix.
