Baked apples are such a simple, easy and truly delicious dessert. They are one of the desserts I remember most from my childhood. My mother has an orchard in her garden back home and used to bake homegrown apples, stuffing them with dates, walnuts, brown sugar and butter. You can pretty much use any dried fruit and nuts and sweeten them with brown sugar, honey, golden syrup or maple syrup.

According to Nancy Baggett’s blog kitchenlane.com the four best apple varieties for baked apples are Empire, Honeycrisp, Jonathan and Rome, so I have chosen to use Honeycrisp

Ingredients

  • 4 large Honeycrisp apples (or other good baking variety)
  • 1/2 cup (3oz, 85g) dried unsweetened cranberries
  • 1/2 cup (3oz, 85g) pecan nuts, chopped
  • 1/2 tsp mixed spice
  • 1/2 cup (125ml) good quality maple syrup
  • 1/2 cup (125ml) boiling water
  • 4 tsp butter or whatever spread you use for cooking

Directions

  1. First wash the apples and remove the cores. Either use an apple corer or do it carefully with a sharp knife.
  2. Prick the apples with a fork and place them in a lightly greased baking dish.
  3. In a different bowl mix the cranberries, pecans and spices.
  4. Fill the centers of the apples with the fruit and nut mix.
  5. Pour the maple syrup into each apple center and top each with a teaspoon of butter.
  6. Pour the boiling water into the dish. This prevents the base of the apples from burning during cooking.
  7. Bake in a 350 degree F (180 degree C) oven for about an hour until the apples are soft. Larger apples may take a little longer. I like to take them out roughly every 20 minutes and baste them with the juices. If you don’t want to do that, you can cover them with foil for the first 30 minutes, to prevent the apples from drying out.
