  1. Preheat oven to 325 F. Grease and flour two 8 1/2" loaf pans. Stir together Large eggs, sugar, oil and vanilla in a medium-size bowl until well mixed.
  2. Combine flour, baking soda, and cinnamon on waxed paper. Stir into liquid mix till mixed. Stir in apples and pecans. Divide between two pans. Make topping and sprinkle one-half each on top of loaves.
  3. Bake for 1 hour 10 min or possibly until center comes out clean with inserted toothpick. Cold in pans 10 min. Remove to wire rack to cold completely.
  4. Yield: 2 loaves
