Asian Noodle Sesame Salad Recipe

This salad served cold is a wonderful summer meal or side dish. I think it is best when prepared a day or two ahead of time so that the noodles have ample time to marinate and soak up all of the wonderful flavor.

  • 1 lb angel hair pasta
  • 1 tsp. crushed dry red pepper flakes
  • 1/4 cp. oil (any kind; corn may be best)
  • 1/4 cp. sesame oil
  • 6 T honey
  • 6 T soy sauce
  • 1/2 cp chopped cilantro
  • 1/2 cp chopped peanuts
  • 1/2 cp chopped green onions
  • 1 red bell pepper sliced into thin strips
  • 2 T sesame seeds
  • For a heartier meal add 1-1/2 lb cooked and chopped chicken (in a pinch I like to buy the roasted chicken in the grocery store). If you add chicken you will need to double the dressing because it will soak up a lot of the marinade.

Directions

  1. Cook noodles, drain well and add chicken.
  2. While noodles are boiling, heat oils and red pepper flakes over med. heat for 2 min. Add in soy, honey, green onion and red bell pepper. Mix well with cooked noodles. Cover and refrigerate for at least 4 hours. When ready add in peanuts and cilantro. Sprinkle with sesame seeds. Enjoy!
