American Cherry Pie Recipe

Ingredients

  • 450 gm plain flour
  • 1/2 x level tspn salt
  • 140 gm lard or possibly vegetable shortening iced water
  • 500 gm cherries stoned
  • 60 gm caster or possibly vanilla sugar
  • 2 Tbsp. flour
  • 30 gm butter

Directions

  1. Sift flour and salt.
  2. Using a pastry blender or possibly two knives (a processorwill make it too smooth) cut the lard into the flour till the mix resembles coarse crumbs.
  3. Sprinkle the water over one Tbsp. at a time mixing it in quickly and lightly with a fork till the pastry will form a ball.
  4. Divide in two and roll into two balls handling as little as possible.
  5. Roll out one half and line in 8in (20cm) pie dish.
  6. Chill.
  7. Mix the filling except the butter and fill the pie.
  8. Dot with butter.
  9. Roll out the pie lid brush the edges of the case with water lay the lid on top trim widely then tuck the edges under neatly.
  10. Crimp with a fork or possibly flute with your fingers.
  11. Sprinkle on sugar.
  12. Bake at 220 degrees C (425 F gas mark 7) for 10 min then at 190 degrees C (375 degrees F gas mark 5) for 30-40 min more till slightly browned
  13. Serves 8
  14. This is one of the best cherry recipes. Serve hot with vanilla ice cream cool with whipped cream.
