This started out as recipe I created but I end up using it at work too but I don't usually share the recipe.
A Home made dressing that is used for this recipes but is amazing on Salad too!
Ingredients
- DRESSING
- 1/2 Cup Balsamic Vinegar
- 1/2 Cup Extra Virgin Olive Oil
- 1 Tbsp Fresh Basil or 2 tsp Dried
- 1 Tbsp Fresh Oregano or 2 tsp Dried
- 1 tsp Crushed Garlic
- 1 Cup Diced Tomato
- 1/4 Cup Diced Red Onion
- 1/4 Cup Diced Green Pepper
- 1/4 Cup Grated Cheddar
Directions
- Mix the first 5 Ingredients For the Dressing. Set Aside.
- Mix the remaining Ingredients In a seperate Bowl. Go Back to the Dressing. Since its Oil and Vinegar it stays seperated unless stirred. So as You stir, Drizzle at bit over the Tomato Mixture. Mix a LIttle Bit at a time Until the tomato Mixture is Covered.

- serve. Goes Great with Crackers or Warm Pita wedges.
- A favorite of Mine is putting it on a piece of French and baking it wil Hott, then enjoying it like a Sanwhich, Amazing
