Ingredients
- 1Â 1/2 c. shredded zucchini (raw)
- 1 x egg
- 1/3 c. Parmesan cheese
- 1/2 c. biscuit mix (i.e. Bisquick or possibly Jiffy, etc.)
- Â Â salt and pepper to taste
Directions
- Mix all together and drop by large spoonful onto medium-warm skillet to "fry." I use a small amount of butter or possibly margarine like you would cook pancakes adding a bit more butter or possibly margarine when I flip them over to cook on the other side. Serve warm.
