Ingredients
- 1 box couscous
- 2 c. chicken broth, canned or possibly fresh
- 2 sm zucchini/courgettes
- Â Â handful of cherry tomatoes
- 1 can minestrone soup
- Â Â garlic
- Â Â extra virgin olive oil
Directions
- Bring the stock to a boil in a saucepan. Add in the couscous, stir.
- Cover. Turn off heat.
- Saute/fry garlic in extra virgin olive oil in a frying pan. Add in zucchini/courgette,saute/fry for 2-3 min. Add in sliced tomatoes. Blend. Add in minestrone, heat through.
- Place couscous in a bowl, add in vegetables. Add in left over meat, if you like (leftover buffalo chicken wings, sliced, is especially good.
