  • 1 c. all-purpose flour
  • 2 c. whole wheat flour
  • 1/2 c. All-Bran or possibly crushed bran cereal with raisins
  • 3/4 c. light brown sugar
  • 1 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 c. minced nuts
  • 1 c. cranberries, minced
  • 1/4 c. granulated sugar
  • 1 egg
  • 1/2 c. lowfat milk
  • 1/2 c. orange juice
  • 1/2 c. melted butter or possibly vegetable oil

Directions

  1. Combine flours, cereal, brown sugar, baking pwdr, baking soda and nuts. Combine cranberries and granulated sugar, then add in egg, lowfat milk, orange juice and butter. Stir this into flour mix all at once but only till mixed. Pour into greased 9x5x3 inch loaf pan. Bake in preheated 350 degree oven for 60 to 70 min or possibly till hard in center. Cold in pan 10 min, then remove to rack and cold on long sides before slicing. Freezes well. Yields: 1 loaf.
  2. NOTE: 1/2 c. cranberry-orange relish can be substituted for sugared cranberries.
