- ¼ cup dry red wine, plus more for deglazing

.%20But%20it%20is%20still%20unexpected,%20fragrant%20with%20bracing,%20fresh%20rosemary%20and%20rich%20yet%20bright%20with%20red%20wine%20(be%20sure%20to%20use%20a%20good%20one!).%20A%20Mediterranean%20Beef%20Stroganoff.%20And%20better%20yet,%20a%20weeknight%20Mediterranean%20beef%20stroganoff%20that%20uses%20the%20shortcut%20of%20ground%20beef.%3C/p%3E%3Cp%3EInterestingly,%20John,%20whom%20I%20did%20not%20expect%20to%20love%20this,%20adored%20it%20and%20devoured%20it.%20On%20the%20other%20hand,%20Alex,%20who%20really%20should%20have%20liked%20it%20(she%20loves%20fresh%20herbs,%20she%20loves%20yogurt%20and%20sour%20cream,%20she%20loves%20noodles%20and%20mushrooms!),%20is%20going%20through%20an%20annoying%20picky%20phase%20where%20anything%20new%20I%20make%20she%20does%20not%20like.%20So%20I%20ignore%20her,%20if%20you%E2%80%99re%20wondering.%20By%20my%20standards%20this%20was%20a%20win.%20I%20started%20with%20a%20recipe%20in%20Cat%20Cora%E2%80%99s%20Cat%20Cora%E2%80%99s%20Classics%20with%20a%20Twist:%20Fresh%20Takes%20on%20Favorite%20Dishes.%3C/p%3E%3Cp%3EYou%20may%20have%20noticed%20that%20mine%20turned%20out%20ever%20so%20slightly%20curdled.%20You%20should%20know%20that%20first%20of%20all,%20while%20not%20beautiful,%20it%20did%20not%20affect%20the%20taste%20at%20all.%20Second%20of%20all,%20you%20can%20easily%20avoid%20this%20happening%20by%20letting%20the%20stroganoff%20cool%20down%20a%20bit%20(I%20tried%20but%20should%20have%20waited%20longer)%20and%20by%20using%20whole%20fat%20Greek%20yogurt%20(I%20was%20out%20and%20used%202%25).%3C/p%3E%3Cp%3EWeeknight%20Ground%20Beef%20Stroganoff%20with%20Rosemary,%20Yogurt%20and%20Mushrooms%3C/p%3E%3Cp%3ERecipe%20type:%20Entree%3C/p%3E%3Cp%3EHeat%20the%20oil%20over%20medium%20heat%20in%20a%20large%20saut%C3%A9%20pan.%20When%20it%20is%20hot,%20add%20the%20onions%20with%20a%20pinch%20of%20salt.%20Saut%C3%A9%20until%20golden,%20about%207-10%20minutes.%20If%20the%20onions%20start%20to%20stick%20and%20you%20need%20to%20deglaze,%20use%20a%20splash%20or%202%20of%20red%20wine.%3C/p%3E%3Cp%3EAdd%20the%20mushrooms%20in%203%20batches%20to%20avoid%20overcrowding%20and%20steaming%20the%20mushrooms%20(they%20will%20shrink%20to%20make%20room).%20Add%20salt%20to%20taste%20as%20you%20add%20the%20mushrooms%E2%80%93mushrooms%20and%20beef%20will%20both%20need%20a%20fair%20amount%20of%20salt.%20When%20the%20mushrooms%20are%20golden%20and%20have%20released%20most%20of%20their%20water,%20add%20the%20tomato%20paste%20and%20garlic.%20Stir%20and%20cook%20for%2030%20seconds.%3C/p%3E%3Cp%3EAdd%20the%20ground%20beef%20with%20salt%20and%20black%20pepper%20to%20taste.%20Cook,%20stirring%20occasionally,%20until%20browned%20and%20no%20pink%20remains.%3C/p%3E%3Cp%3EAdd%20half%20of%20the%20minced%20rosemary%20and%20the%20red%20wine.%20Stir%20to%20incorporate%20and%20then%20let%20simmer%20briskly%20until%20the%20liquid%20evaporated.%3C/p%3E%3Cp%3EAdd%20the%20remaining%20rosemary%20and%20mix%20in.%20Let%20cook%20for%201%20minute.%3C/p%3E%3Cp%3ETurn%20the%20heat%20off%20and%20let%20cool%20for%20a%20minute.%20Add%20the%20parsley%20and%20yogurt%20and%20completely%20mix%20in.%3C/p%3E%3Cp%3EServe%20over%20egg%20noodles.%3C/p%3E%3Cp%3E3.2.1753%3C/p%3E%3Cp%3Ebeef,%3C/p%3E%3Cp%3Eegg%20noodles,%3C/p%3E%3Cp%3Eground%20beef,%3C/p%3E%3Cp%3EMediterranean,%3C/p%3E%3Cp%3Emushrooms,%3C/p%3E%3Cp%3Epasta,%3C/p%3E%3Cp%3Erosemary,%3C/p%3E%3Cp%3ERussian%3C/p%3E){kind=link}
