A very good breakfast dish, and very healthy...now that's an oxymoron, good and healthy!!

  1. In a large skillet heat oil to smoke point and add sweet potatoes.
  2. Cook for 3-4 minutes, add onion and chillies. Cook 5 minutes more.
  3. Add turkey, cinnamon, and sugar; season with cracked pepper and sea salt to taste.
  4. Serve with eggs.
  5. Note: Sweet potatoes should have a little texture, not completely mushy.
