Recently I entered the Panera Sandwich Challenge, but I was force to enter an alternative recipe (had to use their ingredient). This was a collaborated thought with between myself and my wife. Turkey and dressing with cranberry sauce.
Ingredients
- 1 loaf Italian Bread (cut into three equal lengths)
- 1 1/2 lbs. smoked turkey shaved (divided into 3 equal portions)
- 6 slices sharp white cheddar, thin
- 1/2 cup whole cranberry sauce
- 1/4 cup sage compound butter (recipe below)
- Sage Butter
- 1 tbsp rubbed sage
- 1 tbsp fresh sage, chopped
- 1/2 lb unsalted butter, room temp
- 1/4 cup margarine
- 2 tbsp shallots, chopped
Directions
- Make Sage Butter by combining all ingredients in a medium bowl. Set aside.
- Cut bread in half lengthwise, smear top and bottom with sage butter and grill.
- Assemble sandwich by placing turkey on grilled bread bottom, followed by cheese, and cranberry sauce. Place top portion of bread to complete the construction.
