Ingredients
- 2 c. raisins
- 1 can sweetened condensed lowfat milk
- 1 tbsp. grated lemon peel
- 1 tbsp. lemon juice
- 1 c. butter, softened
- 1 1/3 c. firmly packed brown sugar
- 1 1/2 teaspoon vanilla
- 2 1/2 c. oatmeal
- 1 c. flour
- 1 1/2 c. minced nuts (I use pecans)
- 1/2 teaspoon soda
Directions
- Heat oven to 375 degrees. Grease 13 x 9 inch baking pan. In medium saucepan, combine the first 4 ingredients. Cook over medium heat, stirring constantly, just till mix begins to bubble. Remove from heat; cold slightly.
- Beat butter, sugar and vanilla till fluffy. Add in remaining ingredients; blend till proportionately mixed and crumbly. Reserve 2 c.; press remaining mix into bottom of pan. Spread raisin mix to within 1/2 inch of edge. Sprinkle with remaining oat mix; pat lightly. Bake 25 to 30 min or possibly till golden. Cold completely. Cut into bars.
