Ingredients
- 1/4 cup oil
- 3/4 cup granulated sugar
- 2 Eggs
- 1 tsp. vanilla extract
- 1 Cup flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup buttermilk
- Soaking Liquid:
- 1/2 of a (14 oz) can of sweetened condensed milk
- 1 cup half-and-half
- 1/4 tsp vanilla
- Frosting:
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 tsp. vanilla
- Raspberries or Sugared Cranberries for garnish

,%20I%20don't%20know.%20I%20do%20know%20that%20whoever%20wrote%20down%20the%20ingredients%20must%20have%20halved%20the%20recipe.%20It%20was%20all%20good%20though--%20and%20with%20a%20little%20tweaking--dare%20I%20say%20it?--I%20made%20a%20Cafe%20Latte%20Tres%20Leches%20Cake!%3C/p%3E%3Cp%3ECake%20Layer:%3C/p%3E%3Cp%3Esplit%20in%20half).%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20whisk%20together%20the%20oil,%20sugar,%20eggs,%3C/p%3E%3Cp%3Eand%20vanilla.%20In%20another%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder,%20baking%3C/p%3E%3Cp%3Esoda,%20and%20salt.%20Fold%20the%20flour%20mixture%20into%20the%20egg%20mixture.%20Slowly%20add%20the%3C/p%3E%3Cp%3Ebuttermilk,%20mixing%20until%20well%20blended.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20pan%20and%20bake%20for%2035%20to%2040%3C/p%3E%3Cp%3Eminutes,%20or%20until%20the%20top%20springs%20back%20when%20lightly%20touched.%20Remove%20from%20oven%3C/p%3E%3Cp%3Eand%20cool%20for%20at%20least%20ten%20minutes%20before%20removing%20from%20pan.%20Carefully,%20cut%20the%3C/p%3E%3Cp%3Ecake%20in%20half,%20horizontally.%20Place%20each%20half%20sliced%20side%20up%20on%20a%20rack%20to%3C/p%3E%3Cp%3Ecool%20completely.%20While%20the%20cake%20is%20cooling,%20whisk%20together%20the%20sweetened%3C/p%3E%3Cp%3Econdensed%20milk%20and%20the%20half/half.%20Slowly%20pour%20the%20liquid%20over%20each%20half%20of%20the%3C/p%3E%3Cp%3Ecake.%20Cover%20and%20chill%20for%20several%20hours.%3C/p%3E%3Cp%3EWhen%20ready%20to%20assemble%20the%20cake,%20whip%20the%20cream%20until%20stiff,%3C/p%3E%3Cp%3Eadding%20the%20powdered%20sugar.%20Place%20one%20of%20the%20cake%20halves%20on%20a%20serving%20plate,%20cut%3C/p%3E%3Cp%3Eside%20up.%20Spread%20whipped%20cream%20over%20the%20top%20of%20the%20cake%20layer,%20and%20then%20top%20with%3C/p%3E%3Cp%3Ethe%20second%20cake%20half.%20Frost%20the%20top%20and%20the%20sides%20of%20the%20cake%20with%20the%3C/p%3E%3Cp%3Eremaining%20whipped%20cream.%20Garnish%20with%20raspberries%20or%20sugared%20cranberries,%20if%3C/p%3E%3Cp%3Edesired.%3C/p%3E%3Cp%3ECan%20you%20believe%20how%20easy%20this%20is?%20Just%20whip%20up%20the%20cake%20in%20a%20large%20bowl....%3C/p%3E%3Cp%3EYou%20can%20see%20from%20the%20indent%20that%20I%20used%20one%20of%20those%20pans%20with%20the%20whatchamacallit%20scrape%20thing%20on%20the%20bottom.%20It%20made%20getting%20the%20cake%20out%20in%20one%20piece%20really%20easy.%3C/p%3E%3Cp%3EDon't%20the%20cranberries%20make%20it%20look%20all%20holiday-like?%3C/p%3E%3Cp%3EMaking%20the%20sugared%20cranberries%20is%20a%20piece%20of%20cake.%20HeHe.%20Simply%20bring%201%20cup%20of%20water%20and%201%20cup%20of%20sugar%20to%20a%20simmer%20(make%20sure%20the%20sugar%20is%20dissolved,%20but%20don't%20boil...simmer).%20Place%201-2%20cups%20of%20fresh%20cranberries%20in%20a%20bowl.%20Pour%20the%20hot%20sugar/water%20over%20the%20cranberries.%20Cover%20and%20chill%20for%20several%20hours%20or%20overnight.%3C/p%3E%3Cp%3EWhen%20the%20cranberries%20are%20chilled,%20drain%20the%20liquid%20(save%20it,%20if%20you%20use%20simple%20syrup%20in%20your%20drinks),%20and%20roll%20the%20cranberries%20in%20fine%20sugar.%20Let%20them%20dry%20on%20a%20cookie%20sheet%20for%20at%20least%20one%20hour.%3C/p%3E%3Cp%3EStore%20extra%20cranberries%20in%20an%20airtight%20container.%3C/p%3E%3Cp%3EYes,%20I%20believe%20the%20code%20has%20been%20cracked.%3C/p%3E%3Cp%3ENow%20take%20a%20look%20at%20what%20everyone%20else%20is%20making!%20:)%3C/p%3E){kind=link}
