Ingredients
- Orange Scented Sweet Potato Pound Cake
- 1 cup butter, softened (I use unsalted butter)1 ½ cups granulated sugar
- 4 eggs
- ¾ cup cooked, mashed sweet potatoes
- 2 tablespoons fresh orange juice
- 1 teaspoon vanilla
- 1 teaspoon ginger paste (or ½ teaspoon powdered ginger)
- 2 ½ cups cake flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon cardamom
- ½ cup milk
- 1 tablespoon freshly grated orange peel (I used the peel of one orange)

,%20and%20no%20dense%20heaviness.%20%20I%20wanted%20something%20that%20would%20celebrate%20the%20sweet%20potato%20as%20something%20worthy%20of%20a%20Spring%20food.%20Something%20light,%20citrusy,%20and%20sweet.%20To%20be%20honest,%20my%20first%20attempt%20was%20a%20bit%20of%20a%20bomb.%20Methinks%20I%20used%20too%20much%20sweet%20potato.%20Or%20maybe%20I%20didn't%20bake%20it%20enough.%20Oh,%20it%20was%20tasty,%20but%20the%20end%20result%20had%20a%20ribbon%20of%20paste%20near%20the%20bottom%20that%20was%20quite%20unappealing.%20So%20it%20was%20back%20to%20the%20drawing%20board.....%3C/p%3E%3Cp%3EEveryone%20knows%20about%20Sarah%20Lee%20Pound%20Cake,%20right?%20My%20dad%20was%20a%20baker,%20and%20we%20still%20had%20Sarah%20Lee%20in%20the%20house%20when%20I%20was%20growing%20up.%20It%20is%20a%20bit%20of%20moist%20delish%20in%20a%20little%20foil%20pan.%20I%20was%20kind%20of%20going%20for%20that%20kind%20of%20texture,%20but%20with%20a%20beautiful%20sweet%20potato/citrus%20flavor.%20Not%20to%20toot%20my%20own%20horn,%20but---toot,%20toot---I%20succeeded%20beyond%20my%20expectations.%20Without%20further%20ado,%20here%20is%20my%20recipe:%3C/p%3E%3Cp%3EOrange%20Scented%20Sweet%20Potato%20Pound%20Cake%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3ECream%20the%20butter%20in%20the%20large%20bowl%20of%20an%20electric%20mixer.%20Gradually%20add%20the%20sugar,%20beating%20at%20low%20speed,%20then%20increase%20the%20mixer%20speed%20to%20high%20and%20beat%20until%20pale%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20the%20eggs,%20one%20at%20a%20time,%20beating%20well%20and%20scraping%20down%20the%20bowl%20sides%20after%20each%20addition.%20After%20all%20eggs%20are%20in,%20beat%20several%20minutes%20at%20high%20speed%20until%20the%20mixture%20is%20smooth%20and%20very%20pale.%20Beat%20in%20the%20sweet%20potatoes,%20ginger%20paste,%20vanilla%20and%20orange%20juice.%3C/p%3E%3Cp%3EAs%20long%20as%20I%20had%20the%20orange%20left%20over%20from%20grating%20the%20rind,%20I%20thought%20I'd%20add%20a%20little%20of%20the%20juice%20to%20the%20batter.%3C/p%3E%3Cp%3EI%20found%20this%20ginger%20paste%20in%20the%20produce%20section%20of%20the%20grocery%20store.%20It%20gives%20the%20cake%20a%20subtle%20ginger%20flavor,%20but%20you%20can%20sub%20ground%20ginger%20or%20even%20fresh%20ginger,%20if%20you%20prefer.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder,%20salt%20and%20cardamom.%20%20Beating%20at%20low%20speed,%20add%20the%20dry%20ingredients%20in%20thirds,%20alternating%20with%20the%20milk.%20Stir%20in%20the%20orange%20peel.%3C/p%3E%3Cp%3EIsn't%20it%20a%20pretty%20color?%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20two%20greased%20and%20floured%208%22X4%22%20loaf%20pans%20(I%20like%20to%20use%20foil%20pans...maybe%20because%20I'm%20reminded%20of%20Sarah%20Lee...or%20maybe%20because%20I'll%20eventually%20bring%20one%20to%20work%20or%20give%20one%20away%20and%20the%20foil%20pan%20is%20easy%20to%20transport).%20Bake%20in%20preheated%20oven%20for%2060%20to%2065%20minutes,%20or%20until%20the%20top%20springs%20back%20when%20touched.%20Let%20the%20cakes%20cool%20completely%20on%20a%20wire%20rack%20before%20removing%20from%20pan%20to%20slice.%3C/p%3E%3Cp%3EThey%20smelled%20incredible%20at%20this%20point.%3C/p%3E%3Cp%3ETake%20a%20close%20look%20at%20the%20crumb.%20The%20texture%20was%20very%20light%20and%20moist,%20and%20the%20orange,%20ginger%20and%20cardamom%20complimented%20the%20sweet%20potato%20perfectly.%20It%20tasted%20like%20Spring.%20Sweet%20potatoes%20really%20aren't%20just%20for%20Thanksgiving!%3C/p%3E%3Cp%3EPerfect%20for%20breakfast%20with%20a%20cup%20of%20coffee%20or%20tea.%3C/p%3E%3Cp%3ESo%20that%20is%20my%20sweet%20potato%20pound%20cake%20story.%20Don't%20go%20thinking,%20however,%20that%20I'm%20done%20with%20the%20sweet%20potato.%20At%20the%20risk%20of%20turning%20orange%20from%20all%20of%20the%20beta-carotene,%20I%20have%20a%20couple%20more%20ideas.....%3C/p%3E){kind=link}
