Ingredients
- 1 med. onion, minced
- 1 clove garlic, crushed
- 1/2 pound pork sausage
- 1 can (16 ounce.) tomatoes
- 1 can (8 ounce.) tomato sauce
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- 1/2 c. flour
- 1/2 c. cornmeal
- 1/2 c. Parmesan cheese
- 2 tbsp. sugar
- 2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1 med. egg
- 1/2 c. lowfat milk
- 2 tbsp. vegetable oil
- 1 c. shredded cheddar cheese
Directions
- Brown onion, garlic, sausage till sausage shows no pink. Add in tomatoes, tomato sauce, oregano and salt. Simmer, uncovered, for 5 min. Set aside.
- In a bowl stir together Parmesan cheese, flour, cornmeal, sugar, baking pwdr and salt. Mix together egg, lowfat milk and oil. Stir into dry ingredients. Pour in 9 x 13 inch pan. Carefully pour tomato mix over batter. Top with shredded cheese. Bake at 400 degrees for 20 to 25 min. Serves 6.
