Tex-Mex 101 enchilada recipe made with ground beef.
Only recently are people in Mexico beginning to appreciate Tex-Mex foods, which are essentially south Texas ranch country and Mexican fusion foods.
Viva el jalapeno!
Ingredients
- 1 recipe Chile con Carne Sauce
- 1 lb. Velveeta or American cheese
- 1 chopped onion
- 8 oz. cheddar or colby jack cheese, shredded
- 8 flour tortillas, or 12 corn
- cojita or feta crumbles, or shredded Monterrey Jack cheese
Directions
- Prepare chile sauce.
- Heat oven to 350 F.
- Cut Velveeta or American cheese in strips.
- Pour 1/4 of the sauce in a 9x13 baking pan.
- Heat tortillas in a skilliet or the microwave, place cheese strips in each one, roll, place seam side down in pan, not touching.
- Pour remainder of sauce on enchiladas, sprinkle shredded cheese on top.
- Bake 25 minutes.
- Remove from oven, top with onions and cojito or feta, or Jack cheese.
- Note: I prefer to griil the onions and include them inside the enchiladas, but many like the onions raw.
