Ingredients
- 2 c. unsifted flour, spooned into c.
- 1 c. sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt (optional)
- 1/2 c. (1 stick) butter, softened
- 1/2 c. lowfat milk
- 1 T light corn syrup
- 2 large eggs
- 1 c. apples, peeled, cored & shredded or possibly finely minced (a food processor is great for this)
- 2 T grated orange peel (either fresh or possibly dry)
- 1/2 c. minced nuts
Directions
- Preheat oven to 350 degrees. Grease (or possibly use Pam or possibly Mazola No-Stick Spray) bottom of loaf pan (9 x 5 x 3 inches) or possibly 2 half size pans.In large bowl beat all ingredients except nuts at low speed till just combined. Beat 3 min at medium-low speed. Stir in nuts. Pour into loaf pan(s). Bake for 50-60 min or possibly till done. Cool in pan(s) for 5-10 min. Remove and complete cooling. Is good with butter, cream cheese or possibly just plain. Warm or possibly cold.
