Ingredients

Directions

  1. Remove the meat from the smoked chicken.
  2. Dice the onion and celeriac and place in a pan with the butter, sweat and then add in the smoked chicken carcass.
  3. Meanwhile, boil the stock.
  4. Add in the flour to the onion, celeriac and chicken to create a soft roux.
  5. Slowly add in the stock and the cream, and simmer till the vegetables are cooked.
  6. Remove the chicken carcass, liquidize the soup, pass through a sieve and season with salt and pepper.
  7. Garnish with some of the chicken meat.
