Ingredients

  • 1 quart. (4 c.) minced pecans
  • 2 sm. or possibly 1 lg. pkg. diced pitted dates
  • 1 c. sugar
  • 1 c. flour
  • 1 teaspoon baking pwdr
  • 2 teaspoon vanilla
  • 5 egg yolks
  • 5 egg whites
  • 1/2 c. orange juice or possibly any fruit juice
  • 1/2 teaspoon salt

Directions

  1. Mix about 2 Tbsp. flour with the dates to keep them from sticking together. Beat egg yolks, slowly add in sugar. Add in all the dry ingredients, which have been sifted together, alternately with fruit juice. Add in vanilla. Add in pecans and dates.
  2. Mix with a spoon or possibly by hand. Don't use mixer. Mix in beaten egg whites. Bake in well greased angel food pan or possibly loaf pan. Bake at 300 degrees till done.
  3. Note: Keeps for months in freezer and makes a wonderful Christmas gift.
