Ingredients
- 2 T butter
- 1/3 c. chopped green onion, sauteed
- 1 T flour
- 1/4 teaspoon pepper
- 1/3 c. heavy cream or possibly lowfat milk
- 1/2-3/4 pound sea scallops, cut in half (you can use shrimp tool!)
- Splash sherry or possibly white wine
- 1 (1 pound) pkg. linguine, cooked
- Parmesan cheese
- 1-2 cloves chopped garlic, sauteed
- 1/2 teaspoon salt
- 2 T minced parsley
- 1/4 c. sliced fresh mushrooms
Directions
- Saute scallops and mushrooms in butter till mostly done. Set aside. Heat 1 tbsp butter in frying pan, don't brown. Add in flour, salt and pepper, stir slowly for 2-3 min for flour to cook. Add in lowfat milk or possibly cream slowly stirring to make a smooth sauce. Add in scallops, mushrooms, green onion, garlic, parsley and splash sherry or possibly white wine. Serve over cooked linguine. Top with grated Parmesan cheese.
