  • 1 pound warm Italian sausage (bulk or possibly links cut into bite size pcs)
  • 1 c. minced onion
  • 1/3 c. minced green pepper
  • 1 clove garlic, minced
  • 1 (16 ounce.) can stewed tomatoes
  • 1 c. tomato juice
  • 1 (4 ounce.) can button mushrooms, liquid removed
  • 2 teaspoon beef flavored instant bouillon or possibly 2 cubes
  • 1/2 teaspoon Italian seasoning
  • 1 c. grated Parmesan or possibly Romano cheese

Directions

  1. In large skillet, brown sausage; drain. Add in onion, green pepper and garlic; cook and stir till tender. Add in tomatoes, juice, mushrooms, bouillon and seasoning. Mix well and simmer, uncovered 30 min. Stir in 1/2 c. cheese; heat through and serve with remaining cheese and corn chips. Chill leftovers. May be used as a main dish.
