Ingredients

  • 7 Peppers – these can be any pepper type of you choose.
  • Stuffing:
  • 1 bunch of Italian parsley
  • Healthy handful of fresh basil
  • 6-7 garlic cloves
  • 1 tablespoon of pimento olives
  • 1 tablespoon of sun dried tomatoes
  • 2 oz. can of anchovies in olive oil
  • ½ cup Parmesan cheese
  • Drizzles of olive oil
  • 1 cup of grated Monterey Jack cheese

Directions

  1. Preheat Oven 350 degrees:
  2. Place all of the ingredients for the stuffing in a food processor and give a few good chops.
  3. Halve the peppers and take the stems out.
  4. Place on a baking sheet.
  5. Drizzle the peppers with olive oil.
  6. With a teaspoon stuff the peppers. Top with the grated Monterey cheese.
  7. Drizzle a little olive oil over the peppers and bake 20-25 minutes.
