Roasted Red Pepper Emulsion Recipe

Ingredients

  • 2 med red bell peppers roasted, peeled,
  •     and seeded
  • 2 Tbsp. rice wine vinegar
  • 1 Tbsp. Dijon mustard
  • 1 tsp honey
  • 1 Tbsp. chili paste
  • 2 x garlic cloves smashed
  • 1 x shallot finely chopped
  •     Salt to taste
  •     Freshly-grnd white pepper to taste
  • 1 c. vegetable oil
  • 2 Tbsp. extra-virgin extra virgin olive oil

Directions

  1. In the c. of a blender, combine the peppers, vinegar, mustard, honey, chili paste, garlic, and shallots. Season with salt and pepper. Blend for 1 minute. With the blender running, slowly add in the oils and continue to blend for 1 minute. Season with salt and pepper.
  2. This recipe yields about 2 c..
  3. Yield: 2 c.
