Roasted Oysters In Beer With Home Made Hot Sauce Recipe

Ingredients

  • 3 bot dark beer - (12 ounce ea)
  • 2 x clean white dish towels
  • 28 x oysters scrubbed well
  •     (preferably from the East coast)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 c. red wine vinegar
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. chipotle pepper puree
  • 1 Tbsp. honey
  • 1/2 tsp salt

Directions

  1. Preheat oven to 450 degrees and place a large baking pan in the center of the oven.
  2. Pour 2 bottles of the beer in a large bowl, add in the towels and soak them till completely saturated, lightly wring dry.
  3. When the pan is very warm, carefully add in the remaining bottle of beer and the oysters in a single layer. Season with salt and pepper, cover them with the wet towels and roast in the oven for 8 to 10 min, or possibly till all of the oysters have opened, discarding any which don't. Serve, with the Home-made Warm Sauce on the side.
  4. Home-Made Warm Sauce: Whisk together all ingredients in a small bowl.
  5. This recipe yields 4 servings.
