Ingredients

  • 1/3 c. Raisins
  • 1 c. Ribera del Duero wine
  •     (or possibly any full-bodied red wine)
  • 1/4 c. Extra virgin olive oil
  • 1/3 c. Pine nuts
  • 1 x Red cabbage head - (2 lbs) thinly sliced
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Add in the raisins to the wine and let soak till raisins have plumped, about 15 min. Set aside.
  2. Heat the oil in a large saucepan, add in the pine nuts and saute/fry till golden brown, 3 to 5 min. Add in the cabbage and saute/fry briefly while tossing, about 1 minute. Add in the reserved red wine and raisins, and season with salt. Reduce the heat to very low, cover the pan tightly and simmer for 30 to 40 min.
  3. This recipe yields 4 to 6 servings.
