You could use frozen, defrosted potatoes to make this a little easier.

Directions

  1. Slightly brown grnd beef in skillet and drain.
  2. Brush bottom of casserole dish lightly with melted butter. Place diced potatoes in bottom of dish.
  3. Add in liquid removed beef and cover with canned tomatoes.
  4. Season with oregano, salt and pepper.
  5. Bake at 400 degree for 30 to 35 min or till thoroughly cooked.
  6. For variety a small can of sweet peas may be added with potatoes.
