Directions

  1. Prepare potatoes and fry in oil till soft. Scramble Large eggs; add in seasonings. Add in potatoes. Place in slightly greased fry pan over medium heat. When sides of egg pull away from pan, flip pie over. Continue cooking till hard.
  2. HINT: Use a non-stick fry pan. Also, to flip pie, place a plate over fry pan; turn upside down and return to fry pan.
