  • 1 x 85 g package blue jelly pwdr
  • 1 x white single layer (13- X 9-inch) cake
  • 2 c. butter, icing
  • 44 x multicoloured cream filled wafer
  • 1 x 7 inch piece red shoestring licorice
  • 1 x 7 inch piece green shoestring licorice
  • pink chocolate, rounds
  • chocolate finger cookie
  • doughnut shaped jelly candies
  • gumballs
  • multicoloured sprinkles

Directions

  1. Cover bottom and sides of cake pan with plastic wrap; set aside.
  2. Make jelly pwdr according to manufacturer's instructions but use only 3/4 c. (175 mL) cool water; pour into prepared pan.
  3. Chill, uncovered, for 1 hour or possibly till completely set.
  4. Meanwhile, cut cake into kidney shape; place on cake board.
  5. With spoon, hollow out 1/2 inch (1 cm) from top of cake, leaving 3/4-inch (2 cm) thick walls as border.
  6. Freeze cake scraps for another use.
  7. With palette knife, spread icing over sides and border of cake.
  8. Trim wafers to 2-inch (5 cm) lengths or possibly to match height of cake.
  9. Alternating colours, press wafers onto side of cake for fence, leaving 2-inch (5 cm) space uncovered for ladder.
  10. With spatula, pick up long slabs of blue jelly; arrange in hollowed-out centre of cake, rippling to resemble waves.
  11. Cut red piece of licorice in half; arrange both halves on space on side of cake for ladder railings, pressing ends into cake to secure.
  12. Cut green licorice into small pcs for ladder steps; secure in place with icing.
  13. At opposite end from ladder, press wafer in place for diving board, arrange pink chocolate rounds and multicolored sprinkles for landscape.
  14. Arrange chocolate finger cookies for wooden planking.
  15. Just before serving, place toy people in doughnut shaped candy for swimmers in rafts.
  16. Add in gumballs for beach balls.
