Oven Crisped Chicken Recipe

Ingredients

  • 1 x chicken - (2 1/2 to 3 lbs) cut into eighths,
  •     and skin removed
  • 2 tsp salt
  • 1 tsp freshly-grnd black pepper
  • 2/3 c. all-purpose flour
  • 2 x Large eggs
  • 1/4 c. lowfat milk
  • 6 c. toasted rice cereal coarsely crushed
  • 1 tsp garlic pwdr

Directions

  1. Preheat the oven to 350 degrees. Coat a large roasting rack with nonstick cooking spray and place in a large roasting pan.
  2. Sprinkle the chicken with the salt and pepper. Place the flour in a shallow dish. In a small bowl, combine the Large eggs and lowfat milk, whisk till well combined. In a large bowl, combine the cereal crumbs and garlic pwdr, toss to mix well.
  3. Dip the chicken in the flour, then the egg mix, then the cereal mix, completely coating the chicken each time. Place the coated chicken on the rack.
  4. Bake for 50 to 55 min or possibly till no pink remains and the juices run clear.
  5. This recipe yields 4 servings.
  6. Comments: You may want to add in some onion pwdr, an Italian or possibly Greek seasoning blend, or possibly even a little "heat" - you know what your group likes best!
