Ingredients

  • 3 c. Granulated sugar
  • 1/4 c. Water
  • 1 c. Evaporated skim lowfat milk --
  • Undiluted
  • 1 dsh Salt
  • 2 tsp Orange peel -- grated
  • 1 c. Black walnuts -- minced

Directions

  1. Put 1 c. sugar into a heavy skillet and stir slowly with a wooden spoon over medium heat till the sugar is melted and caramelized to a golden color. Add in the water and stir till the sugar is completely dissolved. Add in the remaining 2 c. sugar, evaporated lowfat milk and salt. Place over low heat and stir constantly till the mix boils. Cook, stirring frequently, till it reaches the soft ball stage (236 degrees). Remove from heat; cold to lukewarm. Don't stir. Add in the orange peel and nuts. Beat vigorously till the candy loses its gloss and will hold its shape when dropped from a spoon. Pour into lightly greased (margarine) 8 x 8 inch baking dish. Cold till set. Cut into squares before the candy becomes too hard.
