Ingredients

  • 1 1/2 c. flour
  • 1 c. oatmeal (either instant or possibly long cooking)
  • 1/4 c. brown sugar
  • 1/4 tsp maple pwdr (or possibly 1 tsp. maple extract or possibly 1 Tbsp. maple flavoring)
  • 3 tsp baking pwdr
  • 1/2 tsp salt
  • 1/3 c. peanut butter
  • 1 c. lowfat milk
  • 1 x egg
  • 2 x over ripe bananas mushed up
  •     mix of sugar and cinnamon to sprinkle on
  •     top

Directions

  1. In a large bowl, mix the flour and the oatmeal together, blend in brown sugar (I mix this with my hands, then I can make sure there are no "clumps"
  2. of brown sugar in the dry mix). Add in maple pwdr (if using the liquid forms, add in with lowfat milk), baking pwdr and salt, mix again till well blended.
  3. In another bowl (or possibly in a blender or possibly food processor if so desired) mix the peanut butter, lowfat milk, (liquid maple flavor, if which's what you're using), egg and bananas. Mix well, then combine with dry ingredients, just till dry ingredients are moistened.
  4. Fill muffin tins 2/3 full with batter. Sprinkle sugar and cinnamon on top.
  5. Bake at 400 degrees for 20 min
