Ingredients
- 5 x Ripe/over ripe banana's, about
- 1/4 c. Sugar, (I use less, depends on how ripe the banana's are)
- 1 tsp Vanilla essence
- 2 c. Flour, (I use wholemeal)
- 2 tsp Baking pwdr
- 1/2 tsp Baking soda
Directions
- And I normaly throw a couple of handfuls of dry fruit in.
- What you need is the ubiquitous banana bread, this stuff is packed full of energy, taste is quite easy to make but you do have to bake it.
- Ok, blend the banana's, sugar and vanilla togther till smooth. In another bowl mix all the other bits, then add in the wet to the dry, give it a good stir and dump into a cake tin. And place into an oven at gas mk 5 for about 1 hour.
- Notes.
- Dry fruit optional. Works with less banana's and a tin of apples blended.
- Before placing in the oven a light sprinkle of brown sugar works well. Make sure the mix is all damp before placing in tin. After you get it out of the oven leave it for a while (10 mins) and gently leaver out with a strong knife, this way you do not have to coat the tin.
- This is great if you do a sport as it will provide you with a high glycemic rate to give an instant boost.
- If you make this often then it really is fast to make and very hard to get wrong.
