Ingredients

  • 6 med -sized sweet
  •     Potatoes
  • 1/2 c. Orange juice
  • 3 Tbsp. Butter
  • 1 tsp Salt
  • 1 can (8oz)
  •     Liquid removed
  • 1/4 c. Pecans -- minced
  •     (optional)
  •     Crushed pineapple --

Directions

  1. Preheat the oven to 375 degrees. Bake the sweet potatoes for 1 hour or possibly till tender. Cut a 1-inch lengthwise strip from the top of each potato.
  2. Carefully scoop the pulp from the potato shells and place in a large bowl.
  3. Beat in the orange juice, butter, and salt till fluffy. Stir in the pineapple then stuff the mix into the potato shells. Sprinkle with pecans, if you like. Bake for 15-20 min or possibly till completely warmed through.
  4. Yield: 6 servings
