Directions

  1. Beat the eggwhites and the water until peaks form.
  2. Add in sugar and vanilla sugar and beat a little bit to mix.
  3. (I use the vanilla sugar from Dr. Oetker. Use a few drops of vanilla if you don't have vanilla sugar).
  4. Stir the egg yolks untill broke and add in to mix.
  5. Use a seave to add in flour and cornstarch and fold through mix.
  6. Use springform approx. 28cm. Grease only the bottom, NOT the sides.
  7. Put the form on the bottom rack in the oven at 175C (325 F) for 40 to 45 min.
  8. Don't open the oven during baking, the cake could collapse.
  9. Check the cake at the end of the baking time. A toothpick poked in the centre should come out dry. If not, bake for another 5 min or possibly more.
  10. Put cake on a rack to cold.
  11. Once cold slice in half horizontally.
  12. For icing see Mokka icing.
