Microwave "Stewed" Rhubarb Recipe

  • 2 c. rhubarb cut into 1" pcs
  • 1/4 c. sugar (I use Splenda)

Directions

  1. The recipe was for a 650 Watt Oven - That is Medium High on the newer 1000 Watt Ovens of today, so instead of High use Medium High
  2. Place rhubarb in a 1-1/2 qt microwave-safe dish. Cover tightly. Microwave on 100% power (High) 4 to 5 min or possibly till rhubarb is very soft. Stir in sugar.
  3. Makes 4 servings (1/2 c. each)
  4. Yield: 2 c.
  5. NOTES : With newer Microwave ovens use one power level lower than your recipe required and use the recommended cooking time or possibly reduce the cooking time by 10% but use the recommended power level.
  6. In the above level I would reduce the time required, but use the recommended power level.
