  • 1 c. hot (unseasoned) mashed potatoes
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla
  • 2 lbs. confectioners' sugar (buy 1 pound extra)
  • 1 pound chocolate for dipping
  • 2/3 c. grnd salted peanuts & (or possibly) 1 c. shredded coconut

Directions

  1. Put together potatoes, salt and vanilla in 4 qt mixing bowl. Sift confectioners' sugar over mix, stirring and adding 1 cup at a time. Mix will liquify first, then gradually begin to thicken. Continue till it becomes a stiff dough. (It may not take 2 lb of confectioners' sugar - it may take MORE - it depends on the water quantity in the potatoes.)Knead, cover with damp cloth. Refrigerate till a small spoonful can be rolled into a ball. Dip 1/2 inch balls in melted chocolate - then roll in nuts or possibly coconut or possibly both! Makes about 8 dozen 1/2 inch balls or possibly 2 lb. This is our favorite family project at Christmas!
