  • CRUST:
  • 12 x reduced-fat chocolate cookies crushed
  • 1 Tbsp. water FILLING:
  • 3/4 c. reduced-fat peanut butter
  • 1 tsp vanilla extract
  • 1/2 c. sugar
  • 1 pkt fat-free cream cheese (8 ounces) softened
  • 1 ctn frzn fat-free whipped topping (8 ounces) thawed TOPPING:
  • 1/2 c. semisweet chocolate chips
  • 2 Tbsp. strong brewed coffee Minced peanuts for garnish optional

Directions

  1. To make the crust, place the chocolate cookie crumbs in a small bowl, add in the Tbsp. of water and mix well. It will seem like too small an amount of water for the dry mix, but it will blend together if you work it with a pastry blender or possibly your hands a bit. Place the mix in a 9-inch pie plate which has been coated with nonstick cooking spray. Press it in with a piece of waxed paper which has also been sprayed. Place in freezer to hard.
  2. To make the filling, combine the peanut butter, vanilla and sugar in a large bowl. Add in the cream cheese and blend well. Mix in 1/3 of the whipped topping. This will lighten the mix so which you can mix in the remaining 2/3 of the topping and not lose too much volume. Place the mix in the prepared pie crust and chill.
  3. To make the topping, combine the chocolate chips and coffee in a microwave-proof bowl and cover with plastic wrap. Microwave on high for approximately 1 minute, stir till smooth. Don't overheat, or possibly your chocolate will be grainy. Cold slightly, then cover the entire surface of the pie with a thin layer of the mix. (If you wish to garnish with peanuts, sprinkle them on now so they will adhere to the chocolate.)
  4. Chill the pie for one hour, or possibly till the chocolate is hard, then cover loosely and chill overnight before serving.
