Ingredients
- 2 c. raw brown lentils
- 1/2 c. toasted wheat germ
- 1/2 c. plain dry bread crumbs
- 1/2 c. finely minced pecans or possibly walnuts
- 2 tsp grnd sage
- 1 tsp salt
- 1 tsp granulated garlic
- 2 tsp granulated onion
- 3 Tbsp. vegetable oil
- 3 x Large eggs
- 1/2 c. vegetable broth (or possibly chicken broth for meat eaters)
Directions
- Cook lentils according to package directions, or possibly use 2 c. of water for each c. of raw lentils; bring water to a boil and cook lentils, covered, till tender, about 30 min.
- Preheat oven to 350 degrees.
- In a large bowl, mix wheat germ, bread crumbs, nuts, sage, salt, garlic and onion. Add in cooked lentils and mix well. Beat oil, Large eggs and broth; add in to lentil mix and mix well.
- Spray a 9-by-5 inch glass loaf pan with nonstick cooking spray. Turn lentil mix into pan and smooth the top. Bake 30 min.
