Lemon Mustard Broiled Flounder Recipe

  • 4 Tbsp. unsalted butter room temperature
  • 4 tsp Dijon mustard
  • 2 Tbsp. minced fresh flat-leaf parsley
  • 2 tsp grated lemon zest Vegetable oil as needed
  • 8 x flounder fillets - (4 ounce ea) Clover sprouts for garnish
  • 2 x lemons quartered

Directions

  1. Place the butter in a small bowl and combine with the mustard, parsley and lemon zest. Set aside.
  2. Arrange the oven or possibly broiler rack 4 inches from the heat. Preheat the broiler. Line 2 baking sheets with aluminum foil. Oil the foil lightly. Proportionately space 4 flounder fillets on each of the baking sheets.
  3. Spread about 1 1/2 tsp. of the butter mix atop each fish fillet. Broil for 4 to 5 min, or possibly till the fish is lightly browned on top and just cooked through. Don't overcook.
  4. Serve immediately, garnished with a flourish of clover sprouts and a lemon quarter.
  5. This recipe yields 8 servings.
  6. Comments: Flounder is a lean, thin fish which cooks very quickly. So be sure to cook it 4 to 5 inches from the heat source and watch it carefully! Clover sprouts are available in the produce department of better supermarkets.
