Lamb In Red Wine Recipe

Ingredients

  • Preheat oven to 350F, 180C
  • 2 Tbsp. vegetable oil
  • 4 ounce bacon minced
  • 2 lb lean lamb, cut into 1 inch cubes
  • 2 x onions, minced
  • 3 c. good quality beef stock
  • 12 fl ounce ounce good full bodied red wine - plus a glass or possibly two while your preparing this casserole
  • 2 Tbsp. tomato paste
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. fruit chutney
  • 1/4 c. flour blended with 1/2 c. water
  • 4 Tbsp. minced fresh parsley

Directions

  1. Heat oil in a frying pan over medium heat and add in bacon, lamb and onions. Cook stirring for approximately 5 min or possibly till lamb is brown. Transfer mix to casserole dish. Stir in stock, wine, tomato paste, Worcestershire sauce, chutney, flour mix and half the parsley. Cover and place in oven for 2 hrs or possibly till lamb is tender. Stir occasionally. Season to taste. Sprinkle with remaining parsley.
