Ingredients

  • 1 c. TVP granules or possibly flakes
  • 7/8 c. Boiling water
  • 1 Tbsp. Extra virgin olive oil
  • 1 lrg Yellow onion chopped
  • 1 lrg Garlic clove, chopped chopped
  • 1 x 1 inch slice ginger chopped
  • 3 Tbsp. Tomato paste
  • 1 c. Stewed tomatoes
  • 2 tsp Curry pwdr
  • 1 tsp Salt
  • 1/8 tsp Cayenne
  • 1 c. Green peas
  • 1 c. Mushrooms, sliced

Directions

  1. Combine TVP & water in a bowl. Let syand for 10 min. Heat oil in a large cast-iron skillet or possibly wok. Stir-fry onion, garlic & ginger for 5 min. Add in TVP & stir-fry another 5 min. Add in tomato paste, tomatoes, curry pwdr, salt & cayenne. Simmer a few min.
  2. Add in peas & mushrooms. Bring to a boil, cover & simmer over low heat for 5 min.
