Ingredients

  • 2 lb smoked pork shanks
  • 1 quart water
  • 1 x onion, well browned
  • 1 quart sauerkraut juice
  • 1/4 c. sugar
  • 1/4 c. cream
  • 1 x egg
  • 1 Tbsp. flour
  • 3/4 c. lowfat milk

Directions

  1. Cook meat in water till well done. Add in onion, sauerkraut juice and sugar.
  2. Beat egg, add in flour, lowfat milk and cream. Add in to soup and bring to a boil.
  3. Serve with potato dumplings.
