  1. Heat up a little oil and saute sausage to render off fat - drain excess fat before adding the chicken meat, onions, peppers, and celery. Cook until half done.
  2. Add garlic.
  3. Put 1/3 mixture aside and cool to hold for dinner batch.
  4. Meanwhile - to the miix still working - add 2/3 of the tomatoes, seasoning and stock and cook to bring to tempurature and meld flavors.
  5. Add 2/3 of rice and bring back to tempurature.
  6. Garnish with fresh chopped parsley.
