Directions

  1. Preheat oven to 450 degrees.
  2. Wash and pat dry the roast. Place the jalapenos, garlic, salt, and pepper in a food processor and chop till blended.
  3. Make several slits in the roast and, using an iced tea spoon or possibly your hands, insert the jalapeno garlic mix into the slits.
  4. Pour the water, orange juice, and 1 c. of the white wine into a baking pan. Set the roast in the liquid and place the pan in a 450-degree oven for 30 min. Reduce the heat to 350 degrees and cook, basting occasionally, for another 30 min or possibly till the roast is done.
  5. When done, remove the roast to a carving board and let sit for 10 min.
  6. While the pork is resting, skim the fat off the remaining liquid in the baking pan, then place on top of the stove over high heat. Stir in the remaining c. of wine, deglaze the pan, and cook till the sauce reduces slightly
  7. Slice the pork and serve with the sauce on the side.
  8. SERVING SUGGESTIONS: Serve with oven-roasted potatoes and a fruit salad.
