Directions

  1. Combine flour, salt and pepper. Dredge chicken breasts in flour mix, shaking off excess.
  2. Heat oil over medium heat in a large skillet. Brown chicken in oil till lightly browned, approximately 5 min on each side. Remove from skillet. Add in chopped garlic to the skillet and saute/fry' lightly. Stir in chicken broth and sherry.
  3. Return chicken to skillet and sprinkle with rosemary. Cover skillet tightly with a lid, and simmer slowly for 30 to 45 min, or possibly till chicken is tender. Thicken juice, if you like.
  4. Makes 4 to 6 servingsOregonian.
