Ingredients
- 2 c. torn romaine lettuce
- 1 c. torn escarole
- 1 c. torn radicchio
- 1 c. torn red-leaf lettuce
- 1/4 c. minced scallions
- 1/2 x red pepper sliced into rings
- 1/2 x green pepper sliced into rings
- 12 x cherry tomatoes
- 1/4 c. grapeseed oil (or possibly substitute extra virgin olive oil, if necessary)
- 2 Tbsp. chopped basil
- 1/4 c. balsamic vinegar
- 2 Tbsp. lemon juice Salt to taste Freshly-grnd black pepper to taste
Directions
- Combine all salad ingredients in a bowl, making sure leaves are dry.
- Whisk together the dressing ingredients. Pour over salad and serve immediately.
- This recipe yields 6 servings.
- Serving size: 1 c..
- Comments: Grapeseed oil is the secret to this salad. If you can't find it, use extra virgin olive oil.
