    I LOVE this salad! If you want a salad that tastes fresh, crunchy and like you really care about yourself, this is the one to make. The balsamic vinegar darkens the salad, so if you don't want that, use an herbal vinegar or white vinegar instead. I made this last night and forgot to put in the tomatoes--silly--but I didn't miss them. That is how good the salad is. The pretty pepper rings feel super festive. Plus, my husband commented later how good it was--totally unprompted.
