Ingredients
- 2 can (18 ounce. each) sweet potatoes, liquid removed & mashed
- 1/4 c. miniature marshmallows
- 1/4 c. (1/2 stick) butter, melted
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 c. honey
- 1 1/2 c. slightly crushed corn or possibly wheat flake cereal
Directions
- In large bowl combine potatoes, marshmallows, 1 Tbsp. melted butter, salt and pepper. Form into 10 balls. Hot honey and 1 Tbsp. melted butter.
- Using 2 forks roll each ball first in honey mix, then in cereal, coating thoroughly. Arrange in baking dish. Spoon remaining 2 Tbsp. butter (whichever one you used) over sweet potato balls. Bake 15 min till hot through.
